Chuck roast Olive oil Yellow onions Celery Pumpkin Sweet potatoes Minced garlic Worcestershire sauce Pot roast seasonings Bay leaves Beef broth
Add your seasoned roast beef to a dutch oven and sear on all sides.
Add your onions, sweet potatoes, pumpkin, celery, and minced garlic to the dutch oven. Toss to combine. Cook on high for 8-10 minutes.
Add beef broth into your slow cooker. Add all remaining ingredients and cook on high for 3-4 hours.
Remove the beef roast from the slow cooker and add to a large bowl to shred. Layer the vegetables in the serving dish and place the shredded beef on top. Serve and enjoy!
