Oven Roasted Parmesan Herb Corn on the Cob
When I was growing up there was one way corn on the cob was served–boiled. It wasn’t that we didn’t have a grill or anything–that’s just how my family made it. Boiled corn and there would be butter and pepper to put on it (we were a no salt family). I’m honestly not sure how old I was when I first experienced other toppings for corn, let alone other ways to prepare it. I love corn, especially when it’s fresh, and it has become one of my favorite foods to experiment with. This oven roasted parmesan herb corn on the cob is a tasty variation that works at any time of the year.

Ingredients:
- 4 ears corn on the cob, shucked and rinsed
- 1 stick unsalted butter, softened
- 1 teaspoon minced garlic
- 1.5 teaspoons chopped fresh parsley
- 1.5 teaspoons chopped fresh rosemary
- 1.5 teaspoons chopped fresh thyme
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- ½ cup grated Parmesan cheese
Instructions:
- Preheat your oven to 400 degrees F.
- Line a baking sheet with aluminum foil.
- Place the corn cobs on the prepared baking sheet, one inch apart.
- In a medium sized bowl, combine the butter, garlic, parsley, rosemary, thyme, salt, and pepper.
- Spread the butter & herb mixture generously all over the corn cobs, making sure to coat all sides.
- Sprinkle the grated Parmesan cheese over the butter & herb mixture.
- Bake for 25-30 minutes, turning the corn halfway through cooking.
- Sprinkle additional Parmesan & herbs over the corn, if desired, and serve warm.
Notes:
- You can replace the fresh herbs with dried herbs if needed. If using dried herbs, reduce the amounts to ½ teaspoon of each variety, or simply use 1.5 teaspoons of Italian seasoning instead.
- To add a little extra kick to your corn, you can sprinkle a pinch or two of smoked paprika into the butter or over the corn before roasting.
- If you’re worried about your corn cobs rolling around in the oven while roasting, you can loosely wrap them individually in aluminum foil first.
- For even more flavor, brush the corn with additional garlic & herb butter halfway through roasting or just before serving.
