Turkish White Bean Salad
Are you ready for the easiest side dish salad ever? I’m a massive fan of beans of all sorts and this Turkish white bean salad really lets them shine. I honestly eat this on its own but it makes a great potluck or summer cookout side dish. This salad only takes a few minutes to make (minus marinating time) and you’ll keep going back for more.
Ingredients:
- 1 can white beans, rinsed and drained
- ½ red onion chopped
- 1 tomato chopped
- 2 tablespoons fresh chopped mint
- lemon wedge
For The Dressing:
- 2 tbsp olive oil
- 1 tablespoons lemon juice
- 1-2 garlic cloves, minced (you can do it yourself or buy it minced)
- 1 teaspoon kosher salt
- 1 tsp sumac
- ½ tsp chili flakes (more or less to taste)
Instructions:
In a bowl, whisk to combine the dressing ingredients.
Add the beans, chopped onion, and chopped tomatoes and gently toss to combine.
Chill the salad in the fridge for an hour before serving to allow the beans to marinate and flavors to mingle.
Garnish with chopped mint leaves and a squeeze of lemon and enjoy!
