Peach and Cherry Salsa
We had cherry trees when we lived in the Chicago suburbs and I miss them greatly. It was so much fun to be able to pick our own fruit, especially since cherries can be on the pricier side. I considered attempting a cherry tree here, but I just don’t think it would thrive in North Carolina. However, peaches will, so that’s what I put in (fingers crossed!). I love summer fruit overall and even if you don’t have your own fruit trees (I’m jealous if you do!), the ingredients for this easy peach and cherry salsa aren’t hard to find. It’s a taste of summer in every bite.
Ingredients:
- 2-3 peaches
- 1 cup cherries
- 1 bunch cilantro finely chopped
- 1 jalapeno, diced
- ½ small onion, finely diced
- 1 ½ limes, juiced,
- salt and pepper to taste
- 1 tsp sugar (optional)
Directions:
This is a beyond easy recipe and can be easily made in different quantities and adjusted for taste.
Chop the pitted cherries and peaches as well as the cilantro. Dice the jalapeno and onion. (The jalapeno is optional, but I like the bit of kick it adds.)
In a large bowl, add all the salsa ingredients and gently toss. I squeezed the lime directly into the bowl, but you can juice it separately if you prefer. Add salt, pepper, and/or sugar to taste. I don’t think it needed any of it, but it’s all down to personal preference.
Refrigerate the salsa and allow it to combine for at least 15 minutes before serving.
This peach and cherry salsa is beyond easy to make and is perfect for summer snacks or parties. It’s refreshing and light. Serve it with chips (I love it with plantain chips!) or as a topping with grilled chicken. It can even go with ice cream! This salsa will definitely become a family favorite.
