Raspberry Chipotle Barbecue Sauce

There was a time, years ago, when we went on a homemade rampage with sauces, chutneys, biscotti…all sorts. We put together gift baskets for Christmas and other gift-giving opportunities. The people we gave them to at the time didn’t appreciate them much, so we pretty much stopped. I’m determined to start again–we had so much fun choosing recipes and putting baskets together. I don’t know if we’ll do gift baskets, but I love the feeling of shelves of goods that we’ve made ourselves. This raspberry chipotle barbecue sauce is definitely going to be one of the goodies we make.

Ingredients:

  • 2 Tablespoons oil
  • 2 Tablespoons diced jalapenos
  • 2 Tablespoons minced garlic
  • 3 cups fresh raspberries, rinsed
  • 1/4 cup cider vinegar
  • ½ teaspoon salt
  • 1/2 cup brown sugar
  • ¼ cup honey
  • 2 teaspoons chipotle seasoning
  • ¼ cup tomato ketchup

Instructions:

This is an incredible simple recipe–it might feel like it has a lot of ingredients, but you don’t have to do much once you gather them.

In a saucepan, heat the oil. Add the jalapenos and garlic.

Sauté for 1 minute. Add the rest of the ingredients and bring to a boil.

Simmer on low for about 15 minutes, stirring frequently, until it thickens.

Can it using your preferred method. You can easily adjust the recipe depending on how many cans you want to make.

This raspberry chipotle barbecue sauce is beyond easy to make and so very more-ish. It’s the perfect sauce for almost any meat, can be a spread on sandwiches, or part of a cheese platter. It’s so versatile and pretty!
