Bacon Pesto Pasta

I really struggle with cooking during the week. By the end of the day, the last thing I want to do is stand in the kitchen for ages. Having easy meals to pull from is a lifesaver for me, and I know it's really helpful to have a bunch of options in one place. I've joined in with a bunch of other bloggers to share some of our go-to easy weeknight meals. If you aren't drooling by the time you check them all out, I can't help you! For our bacon pesto pasta, you will need: 8 oz ... Read More

Going Going Pasta

We are constantly playing around with meals that come down to whatever we have on hand. One of our favorite weeknight meals came from Scott throwing together some odds and ends. We call it Going Going Pasta (rhyming with "boing", like what a spring does) because when he originally made it, he used spiral pasta and the girls were playing with the noodles. They "bounced" them on the counter while making sound effects, and the name stuck, regardless of what pasta we use. Ingredients: 1 ... Read More

Chole with Naan

It's definitely getting cooler here in Chicagoland, so we're moving into warm comfort food for dinner. I freely admit that I had never had any sort of curry before meeting Scott, but now they're a staple in our house. Chole with naan is a favorite of ours and is super fast to make. You will need: 1 onion 4 cloves garlic, crushed 4 tbsp curry paste 1 14.5 oz tin diced tomatoes 1 15 oz tin chick peas 2/3 cup water 4 storebought naan Saute the onion and garlic in a ... Read More

Ratatouille Goat Cheese Bruschetta

There are some nights when we don't want a full meal for dinner. When you want something munchy but want to stay relatively healthy, our ratatouille goat cheese bruschetta is perfect. We pulled out a freezer bag of the ratatouille I shared recently. It doesn't take long to thaw in a pot over medium heat. Slice up some crusty bread. Place the slices on a pan, drizzle some olive oil on top, and place under the broiler for a couple of minutes until the bread is just a ... Read More

Ratatouille

As you know, we're big fans of making food that can be frozen and used in a variety of ways. One of our current favorites is ratatouille. For our ratatouille, we used: 2 onions 1 large eggplant 2 14 oz cans of diced tomatoes 2 large zucchini or 1 zucchini and 1 winter squash 2 red peppers handful of chopped basil (frozen or fresh) 1 tsp dried oregano 4 cloves crushed garlic (frozen or fresh) Dice all the ingredients, except the tomatoes, which already are. Heat up ... Read More

If you don't know yet, fall is my favorite season. I love everything about it. I love the cooling temperatures, the trees changing colors, and the smell of spice in the air. I especially love cozy family evenings with a hearty meal. I'm sharing our version of a spiced lentil and rice dish called mujadara that is perfect for those dark and cozy fall evenings. Every time we cook a dish with international flair, we head to World Market. Right now, they're featuring an awesome line-up of fall ... Read More
