Cucumber and Tomato Salad
There are few things that taste better to me during the hot summer months than cucumber and tomato salad. It’s something I grew up with–my grandmother would get the veg from the local farmer’s market and would whip it together in an instant. We ate it as a side dish or on grilled chicken. This salad is light and refreshing and if you’re the gardening type, you’re likely to have the ingredients in your backyard. This version of cucumber and tomato salad isn’t identical to the one I grew up with, but it’s the one we’re currently enjoying.
Ingredients:
- 2 cucumbers, diced
- 1 lemon
- a few mint leaves
- 1 red onion, diced
- 3 tomatoes, diced
- salt and pepper to taste
- 1tsp olive oil
This recipe is so super easy, cheap, and worth it. Start by dicing the veg.
Throw the diced veg and mint leaves in a large serving bowl.
Drizzle with the lemon juice and olive oil.
Mix everything up and add salt and pepper to taste. I’m one of those weird people who doesn’t add a lot (if any) salt to food because I often don’t like it, but I know plenty of people feel differently. I won’t tell you how much to add!
And that’s it! This cucumber and tomato salad is so ridiculously easy but absolutely tastes like summer to me. The mint adds that extra bit of freshness and the whole dish is as refreshing as you can get.
